Breakfast Fried Rice

Using already cooked brown rice, quinoa, farro or spelt, this meal has a base that keeps your body’s energy levels up right through until lunchtime and is rich in both protein and fiber. Thai noodle salad is simpler than it sounds, simply combine some pre-cooked rice noodles with fresh vegetables such as grated cucumber or carrot, followed by some bean sprouts and Chinese cabbage, it’s the perfect combination of fresh and filling. Make a simple dressing with lime juice, soy sauce, fresh garlic and ginger, rice wine vinegar and a pinch of sugar, and keep this separate from the rest of the salad until it’s time to eat. When lunchtime comes combine the two and enjoy the deliciousness of simplicity.
Spicy Chicken Breast
Chicken is the most consumed meat in the world, but still, people seem to struggle with ideas on how to make chicken great! Try making a rub of paprika, dried thyme, garlic powder, salt, onion powder, black pepper and cayenne pepper to really make your chicken stand out. Grill, fry or bake the chicken breast and serve it with oven roasted vegetables such as squash, tomatoes, and red pepper. For a large meal a side of couscous is the perfect addition! This hearty yet healthy dinner is the perfect way to round of a successful day, and a great one to bring out if you’re having friends or family round at short notice!
