When we think of indulgence, we often think of cold winters and rich, fatty foods, but it’s very easy to fall into the habit of eating equally unhealthy food during the hot summer months. This is especially the case with high sugar foods and drinks that make us feel refreshed but also pile on the pounds. So, here at NetCost Market, we’ve come up with some great healthy summer recipes that are light and refreshing but won’t risk ruining that summer body!

Asian Chicken Salad

When it comes to feeling fresh and light in the summer, there’s nothing better than a salad full of crisp, refreshing flavors like mint, cilantro, and cucumber. This salad is the perfect mix of refreshing ingredients and is low in calories and high in protein.

You will need:

2 green onions, 1 piece ginger, 1 clove garlic, 1 large carrot, 1 cucumber (deseeded), 1 yellow bell pepper, 2 romaine lettuce heads, 2 lb boneless/skinless chicken breast, 1 cup chopped cilantro, ½ cup chopped mint, ½ tbsp rice vinegar, 1 tbsp soy sauce, ¼ cup olive oil.

How to make:

  1. Finely chop the ginger and garlic and mix with the vegetable oil, rice vinegar, and soy sauce to form a dressing. Leave to stand.
  2. Next, begin to grill the chicken, sprinkling a small amount of salt on the surface. Flip the chicken halfway through and use a cooking thermometer to ensure it’s cooked the whole way through (175F).
  3. Whilst the chicken is grilling, chop your vegetables into bite-sized pieces or how you please, and add them to a salad bowl along with the chopped cilantro and mint. Toss them together making sure they’re well mixed.
  4. Now, pour over ¾ of the dressing, and give the salad another small mix.
  5. Remove the chicken breast from the grill, chop it into lengthways pieces and lay it across the top of the salad. Drizzle the rest of the dressing across the chicken breast and watch it soak into the succulent meat.
  6. Try garnishing with some cilantro and mint leaves!

Chili Lime Salmon

Fish is the perfect meat to eat during the summer. It’s light, easy to cook and in abundance at this time of the year. This simple and fresh recipe is perfect for when you don’t have time to prepare a complicated meal and it is full of essential vitamins, proteins, and fats!

You will need:

4 large salmon fillets, juice of 2 limes, 2 tsp minced garlic, 1 tbsp chili flakes, 1 tsp cumin, 1 tsp salt.

How to make:

  1. Pre-heat oven to 425F and place a baking tray with a sheet of baking parchment inserted.
  2. In a bowl, mix together the lime juice, minced garlic, chili powder, cumin, and salt.
  3. Brush the fillets with the mixture, and place in the oven for 12-15 minutes until cooked!
  4. Garnish with a small sprig of cilantro and serve with a side salad of fresh lettuce and cucumber.

5-Minute Mango Ice-Cream

Now it’s time for something sweet! And yes, this ice-cream really can be made in 5 minutes! It’s the perfect way to cool down on a hot summer’s day.

You will need:

3 cups frozen mango chunks, ½ cup coconut milk, ½ tsp vanilla extract, 4 tbsp honey, a pinch of salt.

How to make:

  1. Blend all the ingredients together in a powerful food processor or blender.
  2. Keep blending until smooth and free of mango chunks, but DO NOT blend too much as it will melt.
  3. Scoop into small bowls and eat immediately.
