The big attraction with fermented foods is that they provide the gut flora with good bacteria. These good bacteria work by eliminating the bad bacteria that might be lingering. The fermentation process works by allowing the nutrients in foods to be more easily absorbed.

Many people have been eating these foods for years without even being clued in to the new fermenting trend, but for others, it’s become a new way of life – a healthier one.
