Wow Your Summer Crowd With These Easy Yet Delicious Recipes

Summer comes and goes so quickly that we sometimes miss making the most of it! It’s the perfect time to get together with family and friends and have a picnic, barbeque or even an evening dinner party in the yard. Here at NetCost Market, we’ve got some great ideas for simple yet delicious recipes that you can add to your summer banquet repertoire to keep your ideas fresh and your guests happy!

Roasted Balsamic Tomatoes

Nothing screams summer like fresh, flavorsome tomatoes! And for this recipe, only good quality tomatoes should be used in order to ensure that fresh summer taste!

You will need:

10 Beefsteak tomatoes, ½ cup pine nuts, 5 whole cloves garlic, balsamic vinegar, olive oil, salt, pepper.

How to make:

  1. Set the oven to 350F.
  2. Simply half the tomatoes horizontally and place them equally spaced into a large baking tray with the open side of the tomato facing up.
  3. Drizzle over plenty of balsamic vinegar, followed by olive oil and then the pine nuts (making sure you get these evenly placed on the tomatoes themselves).
  4. Sprinkle with plenty of salt and a pinch of pepper and place in the oven for around 20 minutes until the tomatoes are soft and the nuts are turning golden.

Cheesy Squash Fritters

These brilliantly easy squash fritters are great either hot or cold and can be made in advance and then heated in the oven before serving! Any kind of squash can be used, but as it’s summertime, we would suggest using summer squash!

You will need:

4 medium yellow summer squashes, 1 chopped onion, 1 cup shredded cheddar cheese, ½ cup grated parmesan cheese, 1/3 cup cornmeal, ¼ cup all-purpose flour, 1 teaspoon baking powder, ½ teaspoon black pepper, oil for deep frying.

How to make:

  1. Chop the squash into equally sized large chunks and boil in a pan until tender and soft (around 15 minutes).
  2. In a large bowl mash the squash, and blend with all the other ingredients.
  3. Heat about 3 inches of oil in a pan or deep fryer and drop spoonfuls of the batter into the oil carefully.
  4. Each fritter should take around 4 minutes to become golden brown, and once they do, remove them using a slotted spoon and place the fritter on a paper towel.
  5. Serve with garlic mayonnaise or even some spicy sriracha sauce! 

Tangy Watermelon BBQ Sauce

Bring a bit of summer to you BBQ sauce by making it with a watermelon base! This recipe gives that crisp, sweet flavor of summer to ribs, wings or steak and is so easy to make and better than any shop bought alternative!

You will need:

½ cup blended watermelon pulp (make sure you deseed it first!), ½ cup balsamic vinegar, ¼ cup honey, ¼ cup soy sauce, 2 tbsp vegetable oil, 2 tbsp Dijon mustard, 1 tbsp minced garlic, 2 tsp red pepper flakes.

How to make:

  1. Mix together the watermelon pulp, balsamic vinegar, brown sugar, soy sauce, oil, Dijon mustard, garlic and pepper flakes until it forms a nice sticky consistency.
  2. Cover the meat of your choice, we recommend wings or ribs, but steak and even vegetables work well too!
  3. Leave in the refrigerator for at least 12 hours!
  4. Ideally, you want to grill this on a charcoal grill, but you can also roast it in the oven. Ensure you use any leftover sauce for basting.
  5. Serve hot once done!
